Recent Food Safety Trainings, Audits and Publications

Numerous food safety projects have been completed in the year 2000 through early 2002. Countries in which we have worked include the United States, India, China, Australia, Chile, Argentina, Ecuador, Colombia, Mexico, Peru, Morocco, Spain and Holland.

Peter Cocotas has been designated a certified auditor under the National Food Processors Association (NFPA) SAFE Program.

PhF was designated as an accredited third party auditor by Kroger's, Albertson’s, and CKE Enterprises (Carl’s Junior) in conjunction with their programs for conducting food safety audits of all suppliers to their chain.

Pamela Hardt-English wrote an article on "Commercial Sterilization Systems" for the Encyclopedia of Food and Agricultural Engineering to be published in 2001.

Peter Cocotas presented an accredited two day HACCP course, "Understanding and Implementing HACCP Programs for Fresh Produce," in-house at Club Fresh, Sacramento California. October 25-26, 2000.

Peter Cocotas delivered a talk on "HACCP for Fast Food Restaurants" in July of 2000. The talk was sponsored by the National Council of Chain Restaurants.

Peter Cocotas gave a talk on "HACCP Requirements in the USA" in Mendoza Argentina in March 2000.

Peter Cocotas, Pamela-Hardt English and Dr. Roberto Avena-Bustillos presented workshops on HACCP and FDA Low Acid and Acidified Food Validation in Mexico City in November of 1999. The workshop was sponsored by CANAINCA, an association of Mexican food processors.

PhF exhibited at the Food Quality 99 Conference and Expo, September 12-15, 1999 in San Francisco California. Peter Cocotas delivered a talk on "The Safety of Imported Foods" on September 15, 2000 at a session entitled, Quality and Safety Issues in the Import and Export of Foods.

PhF has formed a joint venture with Qualy Foods, Argentina, to perform food safety certification work in Argentina.

Food Safety Projects Prior to 2000

Numerous HACCP projects were completed in 1998 and 1999 involving seafood (Mexico, Morocco, Chile, Ecuador, Colombia, USA), meat (USA and Canada), fresh entrees for internet home delivery ( USA), canned vegetables (Poland, India), spices (India and China) and fast food restaurants (USA and South America). Additional HACCP work was done in Japan.

Peter Cocotas delivered a talk on HACCP and Aquaculture at the International Conference on Aquaculture, Mazatlan, Mexico, on October 2, 1998.

PhF presented two in-house HACCP workshops to US meat processors who face a January 1999 deadline for HACCP implementation. These workshops were accredited by the International Meat and Poultry Alliance.

Peter Cocotas attended the FOOMA 98 Conference, Tokyo, Japan, in June 1998 as a guest of Kumagai Gumi Co, Tokyo, and presented a number of talks on HACCP and a seminar on HACCP Developments in the US.

Dr. Roberto Avena-Bustillos, PhF Mexico, presented a three day workshop on Thermal Processing in Mexico City, October 9, 1998.

PhF has formed a venture with Fundacion Chile, Santiago Chile, to cooperate in the areas of FDA HACCP and Low Acid Canned Food Validation in South America.

Pamela English presented a three day workshop in Chile on FDA Low Acid Canned Food regulations in March of 1998.

Kimberly Cortes and Pamela English published an article, Understanding HACCP's Role in Seafood Regulation. Food Quality magazine. March, 1998.

PhF USA and Morocco exhibited at the SAM Show, Casablanca Morocco in March of 1998.

Dr. Ahmed Essadki, PhF Morocco, presented a paper on HACCP at the Alitec 97 food exhibition in Casablanca in November 1997.

Dr. Roberto Avena-Bustillos, PhF Mexico, helped teach an FDA- sanctioned Better Process Control School in Spanish during November 1997 in Arizona.

Pamela Hardt-English and Kimberly Cortes, PhF USA, presented thermal processing papers at the IFTPS (Institute for Thermal Processing Specialists) meeting in November 1997.

PhF is serving as a HACCP consultant for AFI (Association of Food Industries). In this capacity, we are reviewing HACCP plans for overseas processors in order to evaluate compliance with the FDA Seafood HACCP Law.

PhF Ecuador and CECYP, Ecuador, sponsored a conference on "Requirements of the North American and European Markets for Export Foods" in Guayaquil, Ecuador, on September 4, 1997. Peter Cocotas gave a presentation on " Requirements of the FDA Seafood Law." CECYP is also sponsoring continuing workshops on food safety and sanitation for Ecuadorean food processors.

PhF Ecuador and USA conducted a series of HACCP audits on Ecuadorean seafood processors to assure compliance with the new USFDA Seafood HACCP Law in September 1997.

Peter Cocotas, PhF USA, and Dr. Roberto Avena-Bustillos, PhF Mexico, taught an AFDO approved Seafood HACCP Course in Mazatlan, Mexico on August 20-22, 1997.
